Reflexions hosts acclaimed chef

Reflexions restaurant at the Athenee Hotel Bangkok will host for five evenings a world-acclaimed kitchen wizard, Nicolas Isnard, a co-owner and chef of Michelin-starred restaurant Auberge de la Charme, in Prenois, France.

Restaurant Auberge de la Charme first opened in 2009, and within its first year of operation was granted a star by the Michelin Guide. It also boasts four Gault & Millau "toques" from the influential French restaurant guide.

Isnard, a native of southern French, formed his respect for ingredients and culinary foundation in the kitchen of his Italian grandmother. His dedication to his craft thus led him to pursue culinary training, an effort that culminated in an apprenticeship at the renowned Relais & Château. From there, he earned his stripes at several Michelin-starred restaurants, all in quick succession. By the age of 25, Isnard was the head chef of Auberge de Vieux Puits, which currently holds three Michelin stars.

From Nov 15 to 19, Chef Isnard, who is celebrated for his artistry in southern French cuisine, combining tradition and innovation, discipline and creativity with a mix of distinctive rustic flavours and provincial produce, will personally prepare a series of multi-course lunch and dinner menus for diners in Bangkok.

Representing his "envelope-pushing" evolutions of French and Italian cuisines are creations such as scallops carpaccio and Provençal eggplant caviar; prawns escabeche; veal and hazelnut ravioli; baby squid carbonara; sea bream bouillabaisse Marseille-style; pork cheek confit; foie gras with beetroot, hibiscus and tarragon broth; and, of course, his signature contemporary onion soup.

Dishes are exquisitely paired with fine wine and drinks including sauvignon blanc from Michel Lynch, and blanc de noir Champagne from Charles Collin, France; Joh Jos Prum Riesling from Graacher Himmelreich Spatlese, Germany; DOC Nebbiolo di Sanfrancesco from Roberto Voerzio, Langhe, Italy; sparkling sake from Bijofu Kouchi Japan; orange muscat from Quady Winery, USA; and Old Pulteney's 17-year-old single malt.

A three-course lunch set is priced at 2,000 baht per person, or 2,600 baht with wine paring; while a five-course set costs 2,500 baht per person, or 3,400 baht with wine paring.

For dinner, a seven-course menu costs 3,800 baht per person, or 5,300 baht with wine paring. While a nine-course dinner set is priced at 4,200 baht per person, or 6,000 baht with wine paring.
