Aichi, nestled in central Japan, is renowned for its deep-rooted food traditions, including miso katsu, hitsumabushi, and kishimen noodles—dishes that reflect both samurai-era resilience and modern-day indulgence. With over 26 years of experience in world-class kitchens, including Michelin-starred establishments, Chef Yoshida masterfully balances authenticity and refined craftsmanship, ensuring each dish embodies the region’s essence.

Guests can savour Kurobuta Pork Miso Katsu, featuring the rich, umami-packed Hatcho miso sauce, a Nagoya speciality aged for over two years. The Hitsumabushi, a signature dish of glazed charcoal-grilled eel over rice, offers three distinct ways to enjoy its flavours. Other highlights include the Mikawa Wagyu Striploin Steak, served on a sizzling hot stone, and the Miso Nikomi Udon, a soul-warming dish with slow-simmered wagyu beef tendon in a deep miso broth. To complete the journey, Chef Yoshida presents Tenmusu, a delightful fusion of shrimp tempura wrapped in a delicate rice ball, a beloved Nagoya street food.
